Exotic Mushroom Crostini
10 minutes to prep, 20 minutes to cook, makes 4 servings
Ingredients
8 oz Caputo & Guest Exotic Oven Roast Blend mushrooms, chopped
3 Tbsp extra virgin olive oil
2 Tbsp Worcestershire sauce
2 cloves of garlic, minced
Salt & pepper to taste
2 Tbsp unsalted butter, chilled and cut into pieces
3 Tbsp fresh herbs such as rosemary, chives and parsley, finely chopped
5-7 slices of baguette or French bread, grilled or toasted
Directions
1. Preheat oven to 400 degrees. In a medium size bowl, combine olive oil, Worcestershire and garlic. Add mushrooms and toss gently to coat. Transfer mixture to a medium baking sheet coated with non- stick spray.
2. Transfer mushrooms to the oven. Roast for 15-20 minutes or until tender. Remove from the oven and let cool for 10 minutes. Transfer mushrooms to a bowl, add chilled butter and chopped herbs. Gently toss until butter has melted completely and herbs coat mushrooms. Season to taste with salt and pepper.
3. Spoon mixture onto toasted bread. Serve.
