Exotic Mushroom Pizza
Ingredients
1 12” par-baked pizza crust
½ cup red onion, cut into strips
¼ cup red wine vinegar
¼ cup water
2 Tbsp sugar or honey
½ tsp salt
1 package of Caputo & Guest Wood-Fired Pizza Blend Mushrooms, broken into pieces
3 Tbsp extra virgin olive oil or bacon grease
Salt & pepper to taste
3 ozs Boursin cheese or chive and onion cream cheese, softened
¼ cup heavy cream
2 strips thick-cut bacon, cut into strips and cooked (optional)
2 Tbsp fresh tarragon or chives, chopped
Directions
- Preheat the oven to 375 degrees. In a small saucepan, combine vinegar, water, sugar, and salt. Bring to a simmer for 5 min. Add onion and cover saucepan. Remove pan from heat. Let rest for 5 min. Transfer mixture to a bowl, cover and refrigerate for 1 hour. Drain onions, transfer to a bowl, and set aside.
- Pre-heat a large skillet over medium heat. Add oil or bacon grease and chopped mushrooms. Gently toss to coat. Saute’ for 2-3 minutes or until lightly browned and slightly softened. Season to taste with salt and pepper. Transfer to a bowl and set aside.
- In a small bowl, combine boursin cheese and cream. Stir until smooth.
- To Assemble Pizza: Place pizza crust on a large baking sheet. Spread cheese mixture over pizza crust to within an inch of the edge. Spoon mushroom mixture over cheese spread. Bake pizza for 10 min. or until mushrooms are tender and heated through. Remove pizza from the oven. Sprinkle bacon, tarragon or chives and reserved red onion over pizza. Cut into wedges and serve.
Note: Raw pizza dough can be substituted for the par-baked pizza crust if using a pizza oven or pizza stone.
