Caputo & Guest Maitake Mushrooms, broken into small pieces

Sweet peppers (red, yellow, and orange), finely chopped

Dry onion soup mix(1.1 ozs.)

Herdez Chipotle Salsa Cremosa or similar

Sargento Creamery Baby Swiss Cheese, optional*

Fresh parsley, finely chopped

Chives, chopped

Baguette slices or slider buns, toasted

*For a vegan recipe, substitute your favorite Violife slices/shreds.

 

Directions

  1. Pre-heat a large saucepan or dutch oven over medium heat. Add olive oil, mushrooms, and peppers. Saute’ for about 8 minutes, stirring often until mushrooms have browned slightly and moisture has evaporated.
  2. Add garlic, water, soup mix and chipotle salsa. Cook an additional 5 minutes or until liquid has reduced and mixture has thickened.
  3. Add cheese and stir until melted completely and mixture is creamy and thick. Stir in parsley
  4. Spoon mixture onto baguette slices or onto slider buns. Sprinkle with chopped chives and serve.
