*For a vegan recipe, substitute your favorite Violife slices/shreds.
Directions
- Pre-heat a large saucepan or dutch oven over medium heat. Add olive oil, mushrooms, and peppers. Saute’ for about 8 minutes, stirring often until mushrooms have browned slightly and moisture has evaporated.
- Add garlic, water, soup mix and chipotle salsa. Cook an additional 5 minutes or until liquid has reduced and mixture has thickened.
- Add cheese and stir until melted completely and mixture is creamy and thick. Stir in parsley
- Spoon mixture onto baguette slices or onto slider buns. Sprinkle with chopped chives and serve.
